This is a One Skillet Frank & Beans Casserole that is So super easy and tasty – perfect for a chilly day too! This comes out to be a very thrifty recipe no matter where you have to shop!

One Skillet Frank & Beans Casserole

1 TBS extra-virgin olive oil
2 packages of Bar S Hot Dogs
1 medium red onion, chopped
2 tablespoons molasses (OPTIONAL)
3 tablespoons Worcestershire sauce  (OPTIONAL)
2 cups (15 oz can) tomato sauce (OPTIONAL)
3 16 oz cans or 1 family-size can baked beans
2 8.5 oz boxes Jiffy Corn Muffin Mix (or other brand)
2 eggs
4 tablespoons (1/2 stick) butter, melted
1 1/2 cups whole milk
1 tablespoon (about a palmful) chili powder
1/2 cup frozen corn kernels and/or 2 cups shredded cheese (OPTIONAL)

1. Preheat oven to 400°F. Place a large, oven-safe, nonstick skillet over medium-high heat, add olive oil.

2. Add the sliced hot dogs to the pan and brown, about 6-8 minutes. Add the chopped onion and cook for about 3-4 minutes.

3. Combine molasses, Worcestershire and tomato sauce in a small bowl and add to the skillet. Add the baked beans and bring up to a simmer.

4. While the hot dog mixture is coming up to a simmer, mix the two packages of muffin mix together with eggs, melted butter, milk, chili powder, and (cheese and corn). Pour the mix over the top of the hot dog mixture in the skillet. Place skillet in the oven and bake until cornbread is light golden in color, 12-15 minutes.
Hint: All of the optional items are only to enhance the flavor of the beans, but it’s still tasty without them.
