How to Roast Asparagus


Last year I was on a mission to find many ways to cook asparagus. When I created my Mother’s Day brunch for 2012, I decided to try roasting the asparagus and topping it with ham, egg, and hollandaise sauce. You can get that brunch recipe here. Sometimes I opt to microwave asparagus for ease and convenience, but I decided to try roasting it to give it more of a crunch. I think roasting asparagus is my favorite way to cook it so far. With this method, the asaparagus gets perfectly cooked. Great flavor, and perfect amount of crunch.

Ingredients
  • asparagus
Instructions
  1. Preheat oven to 400°.
  2. Line a baking sheet with foil, for easy clean up. Then lay your asparagus on top of the foil.
  3. Drizzle olive oil over asparagus, and sprinkle with coarse salt. If you want to make sure your asparagus is evenly coated after you have sprinkled your salt, you can rub them all together with your clean hands.
  4. Bake in oven for 8 minutes.
  5. Remove, and enjoy by themselves, or in a dish.
Notes
Seasonings, such as lemon pepper, would be very tasty with the asaparagus.
