Juicy slow cooker lemon chicken, oh-so-sweet carrots and perfectly prepared potatoes make this slow-cooker recipe an easy weeknight meal with just enough elegance to wow your entire family. Plus, see how a new line of locally grown and antibiotic-free fresh chicken from my sponsors at Foster Farms made me feel even more excited about serving this dish to my family.

This past week has been a tad hectic. Nothing terrible, just a lot of little extras… Extra activities, appointments and errands that added up to a busy week. By the end of the week I was feeling a little frazzled and wanted to prepare a healthy and delicious weeknight dinner that would be easy to prepare and get us all sitting at the dinner table together.

While picking up a couple things at the grocery store, I saw a display for new Simply Raised fresh chicken breast fillets and drumsticks and knew exactly what to make for dinner, slow-cooker lemon chicken with sweet baby carrots and seasoned potatoes.

I love this recipe because it is simple, fresh, healthy and the whole family loves it. It only takes a few minutes of prep time and the result is a completely ready, elegant-looking meal that is sure to wow everyone! The chicken is so juicy and the lemon flavors in the dish complement the baby carrots so well making them taste so sweet that even my kids eat them. I also love that the potatoes are cooked to perfection, so the entire meal is ready to serve, with minimal work at dinner time.

I was excited to find the new Foster Farms Simply Raised line of fresh chicken because it is raised without antibiotics,100 percent natural and is only minimally processed with no additives, preservatives, steroids or hormones. This means I can feel secure that I am feeding my family a healthy and all natural meal. I also love that it is locally grown and delivered to the stores within 48 hours, so I know that I am preparing a truly fresh meal.

To help make life simple, this new line of Foster Farms Products including Foster Farms® Fresh & Natural, Foster Farms® Simply Raised (without antibiotics) and Foster Farms® Organic all come in their new packaging so you can know right away that you are getting the freshest selection available.

Foster Farms Simply Raised is currently available in stores throughout CA, OR, WA, with Organic now in Costco and select grocery stores in the West Coast.

Once I had my Foster Farms Simply Raised breast fillets and drumsticks in my cart, I picked up some fresh lemons, baby carrots and potatoes and headed home to put it all together in the slow cooker. After letting it cook all day while I was busy getting the rest of my errands done and picking up and dropping off kids here, there and everywhere it was so nice to come home to a delicious and fresh meal that the whole family was excited to enjoy!
