Frosted Chocolate Pound Cake


This simple Frosted Chocolate Pound Cake is inspired by Nancy Creative. If you can’t tell already, I LOVE chocolate desserts! Okay, okay – I really enjoy all kinds of desserts. This chocolate pound cake is a little rich, dense and perfectly pairs with a fluffy buttercream frosting. The nice thing about this dessert is that you don’t need to eat a lot of it to get satisfied!

Frosted Chocolate Pound Cake

Ingredients
  • 1/2 cup butter, softened completely
  • 1/2 cup sour cream
  • 1 1/2 cups sugar
  • 1/2 Tbs half and half
  • 3 eggs
  • 1 1/4 cups flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2/3 cup unsweetened cocoa powder
  • Frosting-
  • 1/3 cup margarine
  • 4 1/2 cups powdered sugar
  • 1/4 cup milk
  • 1/2 tsp almond extract
Instructions
  1. Preheat oven to 325°. Grease and flour a 9×5″ loaf pan; set aside.
  2. In a large bowl, cream butter, sour cream, sugar, and half and half. Blend well.
  3. Add the eggs, one at a time, beating well after each addition.
  4. In a medium bowl, stir together the flour, baking powder, salt, and cocoa powder.
  5. Add half the flour mixture to the butter-sugar mixture and blend well; then add the remaining flour mixture and blend everything well.
  6. Pour or spoon batter into prepared loaf pan and bake for 70 to 75 minutes or until toothpick inserted in center comes out almost clean. Do not overbake or it will be dry.
  7. Cool in loaf pan 10-15 minutes; then remove from pan and cool completely.
  8. When loaf is completely cool, frost with Buttercream Frosting.
Buttercream frosting –
  1. With an electric mixer, beat butter until fluffy.
  2. Gradually add 2 cups of powdered sugar, beating well. Slowly beat in the milk and extract.
  3. Slowly beat in the remaining powdered sugar, and additional milk if needed, to reach spreading consistency.
