Every Thanksgiving we try to introduce at least one new recipe to the table. This year we went with a delicious looking dessert that ended up being the family favorite. Apple Blondie Cheesecake with Caramel Sauce is a delightfully decadent dessert that was a huge hit for both adults and kids. Some of the teens raved about it so much, that I believe it will be making an appearance at birthday time. Every bite is a flavorful sensation to the palate. The cake, which comes from Life, Love and Sugar, combines the yumminess of a apple spiced blondie bottom, the creamy cheesiness with a hint of caramel and spice in the cream cheese layer and all if it topped with spiced cinnamon apples, dolloped with cinnamon whipped cream and a drizzle of caramel sauce. Yes, there are several steps to making the cake, but none are hard or time consuming. First you make the caramel sauce (which incidently can be made for just about anything, and saved in the fridge. I’d make a double batch and use half for the cheesecake, and save half for later), then you make the blondie layer and allow it to cool while you make the cream cheese layer. Let those set, then just before serving, make the spiced apples, whip the cream and put it all together to WOW your family or guests. This is definitely a Winner Dessert!

Apple Spice Blondie
  1. 3/4 cup butter
  2. 1 1/2 cup brown sugar
  3. 3 tsp vanilla
  4. 1 whole egg
  5. 1 egg white
  6. 1 1/2 cup flour
  7. 1/2 tsp cinnamon
  8. 3/4 tsp apple pie spice
  9. 3/4 tsp baking powder
  10. 1/4 tsp baking soda
  11. 1/4 tsp salt
  12. 1/2 apple, well chopped
Caramel Cheesecake Filling
  1. 16 oz cream cheese, room temperature
  2. 1/2 cup sugar
  3. 1/2 cup brown sugar
  4. 3/4 cup caramel sauce* (see ingredients and directions below)
  5. 1/2 tsp apple pie spice
  6. 4 oz cool whip
Caramel Sauce
  1. 1/2 cup (1 stick) butter
  2. 1 cup light brown sugar
  3. 1/3 cup heavy cream
Cinnamon Apples
  1. 2 apples, thinly sliced
  2. 2 tsp lemon juice
  3. pinch of nutmeg
  4. 1 tsp cinnamon
  5. 4 tbsp brown sugar
  6. 1 tbsp butter
Cinnamon Whipped Cream
  1. 1/2 cup heavy whipping cream
  2. 1/4 cup powdered sugar
  3. 1/4 tsp cinnamon
Caramel Sauce
  1. Melt butter in a saucepan.
  2. Add brown sugar and heavy cream and whisk constantly over medium heat until sugar is dissolved.
  3. Bring to a boil and allow to boil for 3 minutes, no more.
  4. Remove from heat and allow to cool. Set aside for later use.
Apple Spice Blondie Directions
  1. Line the bottom of a 9 inch springform pan with parchment paper and grease the sides of the pan. Preheat oven to 350°.
  2. Melt the butter in a microwave safe bowl, then transfer to a mixing bowl.
  3. Add brown sugar to melted butter and whisk to combine.
  4. Add the vanilla, egg and egg white and whisk until well blended
  5. In another bowl, combine dry ingredients.
  6. Slowly add dry ingredients to wet ingredients until combined - batter will be thick.
  7. Fold in finely chopped apples.
  8. Pour batter into springform pan and bake for 30-33 minutes.
  9. Allow to cool for about 5 minutes, then remove from pan onto a rack to finish cooling.
  10. Cheesecake Filling Directions:.
  11. Beat cream cheese and sugars until smooth
  12. Add about 3/4 cup of the caramel sauce and apple pie spice and mix until well blended.
  13. Gently fold in the Cool Whip.
Assembling the Cake
  1. Place blondie back into the springform pan.
  2. Spread cheesecake evenly on top of blondie, then put in refrigerator until firm about 3-4 hours or cover overnight.
Cinnamon Apples Directions
  1. Combine apples, lemon juice, nutmeg, cinnamon and brown sugar in a medium saucepan and toss to coat.
  2. Add butter and cook apples on medium-high for about 10-15 minutes, or until at preferred softness.
  3. Allow apples to cool for 10-15 minutes, then gently spoon on top of cheesecake.
Cinnamon Whipped Cream
  1. To make cinnamon whipped cream, whip the cream in a chilled metal bowl on high speed until it begins to thicken.
  2. Add powdered sugar and cinnamon and whip until it you get stiff peaks.
  3. Pipe or dollop whipped cream around edges of cheesecake.
  4. For the final Garnish, drizzle the remaining caramel sauce on top of the whipped cream, letting it drizzle over the sides of the cake.
