Can I just begin by saying that I am a tad overwhelmed right now? I have a feeling it will be that way until Christmas, but I am trying my hardest to get caught up on work so I can enjoy my kiddos when they are off of school. There are some nights (more than I care to admit) where I have forgotten to plan for dinner and it becomes a pizza, chicken nugget or cereal kind of night. Then sets in the guilt. It is my job to feed these critters after all. We all could use more quick and easy meals, right? I have a trick up my sleeve, and it’s called Minute® Rice.
Break out the creativity and spruce up Minute® Rice in a variety of ways, for fast weeknight meals to please. One thing I love about Minute® Rice is that I don’t have to do the math with water to rice ratio, because who has extra brain power to spare during the holidays? Use equal parts water and rice, and the prep is super easy. Bring water to a boil, stir in rice, cover and remove from heat for 5 minutes. Voila – rice is ready! Now just to come up with tasty ways to add protein and/or veggies, and you’ve got a meal.
Because dinner was an afterthought one night this week, I threw together this Quick Kielbasa and Rice Skillet. Kielbasa is one of my favorite ways to add protein in a hurry. Pre-cooked, delish and can be added to just about any carbohydrate. This rice skillet can be easily altered for completely different tastes. Go spicy, go mild – it’s your call!

Quick Kielbasa and Rice Skillet
Ingredients
- 15 oz Polksa Kielbasa
- 1 medium-sized orange bell pepper
- 1/2 yellow onion chopped
- 2 garlic cloves minced
- 1 cup chicken broth
- 3 cups Minute® Rice
- 3 cups water
- 1 tsp salt
- 1/2 tsp black pepper
- parsley for garnish
Instructions
- In a medium saucepan, bring water to a boil.
- Add rice, cover, and remove from heat. Allow to sit for 5 minutes.
- Meanwhile, cut Kielbasa into bite-size slices and saute in a large skillet over medium-high heat, for 5 minutes.
- Add peppers, onion and garlic and cook for another 5 minutes.
- To frying pan, add broth and bring to a boil. Then stir in cooked rice, salt and pepper. Heat through for another 5 minutes.
- Garnish with parsley, and serve.
