I just moved into my new home last week, and boy has it been a crazy time! Between the kids adjusting to a new school, packing and unpacking, and trying to adjust to the new house (built in 1878), where does that leave time for lengthy meals? It just doesn’t! Our new home isn’t close to fast food, which is a healthy thing, but it means I need to get my rear in the kitchen more. I’ve been a good girl and have been doing lots of home cooking, and what I love are easy 30 minute meals (or less). I like to cook with a variety of meats, and this Creamy Mushroom Pork Loin and Rice is a huge family hit.

Ingredients
  1. 1 Smithfield Marinated Fresh Pork, sliced 1/4-inch thick
  2. 1 Tbs olive oil
  3. 1/2 onion, sliced
  4. 1/2 Cup sliced cremini mushrooms
  5. ¼ Cup chicken broth
  6. 1 Tbs whole-grain mustard
  7. ⅔ Cup heavy cream
  8. Salt and pepper to taste
Instructions
  1. Heat olive oil in a large skillet, over medium-high heat. Add pork slices and brown 2-3 minutes per side.
  2. Remove meat and set aside on a plate.
  3. To the same pan add onion and cook for 3 minutes, stirring constantly. Add mushrooms and cook for another 5 minutes, scraping the bottom and sides of the pan.
  4. Add chicken broth, mustard, and heavy cream, and stir to combine.
  5. Return pork to the pan and bring to a boil and let simmer for 2-3 minutes. Add salt and pepper to taste, if desired. Remove from heat and serve over rice.

  • Very good, very easy recipe. I will definitely make it again. Had to make some alterations because I didnt have everything on hand. I had a lemon and garlic pork tenderloin i used. I only had dijon mustard that worked very well. i doubled the chicken broth and heavy cream. i served over egg noodles, and next time I think i will triple the onions and sliced mushrooms. this was such a super easy, delicious dinner. also, clean up was very easy. THIS is the type of recipe i look to make for our super busy week nights. I served this with a salad and some roasted zuch and everyone was pleased and stuffed.
