Homemade Banana Bunny Cake

Ingredients
  • ⅔ cup butter
  • 1⅔ cup sugar
  • ⅔ cup buttermilk (just add 1 Tbs of vinegar to regular milk to sour)
  • 1 ¼ cup fully ripe mashed bananas (I used 4 bananas, but 3 will work)
  • 2 eggs
  • 2 ½ cup flour
  • 1 ¼ tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
Instructions
  1. In mixer, cream the butter and sugar.
  2. Beat in the bananas (I just put them in whole and beat them in well), but you can mash them first.
  3. Add half of the buttermilk and the eggs, and combine.
  4. Stir all of the dry ingredients together in a separate bowl and gradually add to the creamed mixture, alternately with the
  5. remaining buttermilk. If desired, add ⅔ cup chopped walnuts.
  6. Pour batter into 2 two greased & floured 8” or 9” round pans.
  7. Bake at 350° for about 35 min or until toothpick comes out clean. Cool slightly, then remove from pans and cool on rack or clean dishtowel.
