Cranberry Pineapple Punch

Take this dessert-y punch to your next celebration, and everyone will be in for a real treat!

Ingredients
  

  • 1 cup fresh or frozen cranberries
  • 1/4 cup sugar or more depending on tartness desired.
  • 2-4 Tbs water
  • 1/4 cup more cranberries to float in punch
  • 1 can frozen lemonade concentrate thawed
  • 1 can frozen cranberry apple juice concentrate thawed
  • 32 oz pineapple juice
  • 2 liters ginger ale
  • 1 quart raspberry sherbet

Method
 

  1. In a small saucepan make a puree with 1 cup cranberries, the sugar and a few Tbs of water over medium heat until sugar is dissolved. Mash with a fork or potato masher to infuse the cranberries and create a chunky puree. Remove from heat.
  2. Pour frozen concentrates and cranberry mixture into a large punch bowl and stir until combined. Do not add water.
  3. Add pineapple juice and ginger ale to punch bowl and mix.
  4. Using a cookie scoop (or small ice cream scoop), drop scoops of sherbet on top of punch. Top with remaining cranberries, sprinkled throughout the punch.
  5. Serve and enjoy! This punch will have your guests asking for the recipe!
