Pumpkin Apple Pecan Cake

Ingredients Method

Ingredients
  

  • 1 pkg Pillsbury Pumpkin Quick Bread
  • 1 cup water
  • 3 Tbs oil
  • 2 eggs
  • 1 apple peeled and diced
  • 1 tsp ground ginger
  • 1/2 cup chopped pecans
Lemon Sauce
  • 2 cups very hot water
  • 1 cup sugar
  • 2 Tbs cornstarch
  • 1/4 tsp salt
  • 1/4 tsp nutmeg
  • 4 Tbs butter
  • Juice of 1 lemon to equal 4 Tbs

Method
 

  1. Preheat oven to 350° and spray 8x8 baking dish with non-stick spray.
  2. Mix all the ingredients together in a bowl and stir gently with a spoon. Pour batter into 8 X 8 baking dish sprayed with non-stick spray.
  3. Bake for 30 - 35 min. Check middle for doneness by touching lightly with finger. Serve with warm Lemon Sauce.
For the lemon sauce
  1. Stir sugar, cornstarch, salt and nutmeg in a small saucepan. Add the hot water and stir over medium heat until it comes to a boil. Boil for 1 min. Remove from heat and add butter and lemon juice. Stir until butter is melted.
