Sausage, Egg and Potato Skillet

Potatoes and sausage fried up and topped with eggs make for a great entree for any meal.

Ingredients
  

  • olive oil to drizzle
  • 1 bag Ruby Sensations Potatoes from Tasteful Selections quartered
  • 1 lb sausage
  • 1/2 green bell pepper sliced and chopped in half
  • 1/2 red onion sliced
  • 1 garlic clove minced
  • 5-6 eggs
  • salt and pepper to taste
  • 1/2 cup cheddar cheese shredded

Method
 

  1. Drizzle olive oil in a cast iron skillet and add sausage links. Chop into bite size pieces while browning over medium-high heat.
  2. Remove cooked sausage, leaving grease and scrapple.
  3. To the pan add cubed potatoes and cook to tender crisp while stirring, to keep from burning. Season with garlic and herb seasoning.
  4. When potatoes are barely fork tender (about 10 minutes) add remaining veggies. Cook until almost tender and add sausage back to the skillet. You may need to reduce the heat to keep from burning. Sprinkle with cheese.
  5. Crack eggs over the top of cooked mixture, careful not to break yoke.
  6. Put 2-3 Tbs of water in the under side of a lid. Quickly place over skillet and allow eggs to poach, 8-10 minutes. Try not to peek.
  7. Once eggs are poached the meal should be ready to eat.
