Method
- Cook shrimp according to instructions on package.
- While shrimp is cooking, Over medium-high heat, saute veggies in about 1 tablespoon of oil, until they are heated through (about 4-5 minutes).
- With vegetables pushed to one side of the pan, crack eggs into the now vacant half of the pan. Cook for 1 minute before scrambling with a fork. When cooked, combine egg with the vegetables and shrimp.
- Reduce heat to medium and add rice, soy sauce, and seasonings to the pan. Heat through for 6-8 minutes, stirring frequently.
- Serve hot.
Notes
Can substitute brown rice.
