Black Beans and Lime Rice

Ingredients
  

Lime Rice
  • 2 cups uncooked organic brown rice
  • 2 cups water
  • 2 Tbs lime juice
  • 1-2 Tbs cilantro
Black Beans
  • 2 cans S&W Organic Black Beans
  • 3/4 cup chopped red onion
  • 2 tsp olive oil
  • 2 cups vegetable broth
  • 1/2 cup water
  • 1 15 oz can organic corn
  • 1 tsp garlic salt
  • 2 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp red pepper

Method
 

  1. Rinse rice and place in the bottom of your pressure cooker. Add water and cook on manual for 15 minutes, with natural release.
  2. To cooked rice, add lime juice and cilantro.
  3. While rice is cooking, prepare beans.
  4. In a medium saucepan, saute onion in oil over medium-high heat. Cook until onions are softened and translucent, about 5-7 minutes. Add all seasonings and cook another minute or two.
  5. To onions, add beans, broth, water and corn. Cover and simmer for 15 minutes.
  6. When rice is finished, pour into a large bowl. Add bean mixture to the rice, leaving some of the liquid out, so your rice doesn't end up runny. Serve and enjoy!
