Method
- Preheat oven to 350°.
- In a mixing bowl, cream together shortening, sugar, orange zest and vanilla until combined. Add in eggs and beat until light and fluffy then mix in milk.
- In a separate medium-sized bowl, sift together the dry ingredients (flour, baking powder and salt), and fold into wet mixture.
- Slightly flatten batter between two sheets of waxed paper and then between two baking sheets. Refrigerate for one hour.
- Remove dough from refrigerator and press into a pizza pan, using your fingers. Round up the edges slightly, just as you would for pizza.
- Bake for 12-15 minutes or until cookie dough is lightly golden. Be careful not to overcook as you want the crust to be soft. Remove from oven and allow to cool completely.
- Using a mixer, whip together Marshmallow Creme and cream cheese until light. Spread onto cooled crust and decorate with sliced fruit.
