With all of the many desserts to be devoured, there is just something special about a treat that brings back childhood memories. I remember my mom occasionally making Fruit Pizza, but I also remember going over to a girlfriend’s house and there would frequently be a Fruit Pizza sitting around for us to munch on. I don’t know if her mom planned it because she knew I loved it, or if it was just coincidence, but either way I was going to gobble it up. I think it had been since my teenage years since I’d eaten a slice of Fruit Pizza, until this past weekend.
Anytime I spot a yummy looking version of fruit pizza on Pinterest, I simply must Pin it and try to remind myself to make it. Obviously the making it part never came around – not with the growing list of things to make from Pinterest! Then my mom spotted this Deep Dish Fruit Pizza from The Cutest Little House in Town, and decided to whip it up for a gathering she was having at her house. Lucky for me there were leftovers! I have to say that with the “deep dish” crust and the combination of cream cheese and marshmallow creme for the center, it was divine! You can top your “pizza” with any fruity toppings you’d like. I’d love to hear what combinations you come up with! I think there should even be different names for these babies, just like regular pizzas have for their different toppings. Any suggestions?
Deep Dish Fruit Pizza
Ingredients
- 11/3 cup shortening
- 11/2 cup sugar
- 1 tsp orange zest
- 1 tsp vanilla
- 2 eggs
- 2 Tbs whole milk
- 4 cups all-purpose flour
- 3 tsp baking powder
- 1/2 tsp salt
- 2 jars 13 oz each Jet-Puffed Marshmallow Creme
- 2 packages cream cheese
- Assorted fruits
Instructions
- Preheat oven to 350°.
- In a mixing bowl, cream together shortening, sugar, orange zest and vanilla until combined. Add in eggs and beat until light and fluffy then mix in milk.
- In a separate medium-sized bowl, sift together the dry ingredients (flour, baking powder and salt), and fold into wet mixture.
- Slightly flatten batter between two sheets of waxed paper and then between two baking sheets. Refrigerate for one hour.
- Remove dough from refrigerator and press into a pizza pan, using your fingers. Round up the edges slightly, just as you would for pizza.
- Bake for 12-15 minutes or until cookie dough is lightly golden. Be careful not to overcook as you want the crust to be soft. Remove from oven and allow to cool completely.
- Using a mixer, whip together Marshmallow Creme and cream cheese until light. Spread onto cooled crust and decorate with sliced fruit.
