One Pan Garlic & Herb Pork Loin Filet with Veggies

Ingredients
  

  • Smithfield Roasted Garlic & Herb Pork Loin Filet
  • 2 cups Yukon gold potatoes chopped into bite-size pieces
  • 1 cup baby carrots
  • 2 Tbsp olive oil divided
  • 1 tsp garlic salt
  • 1 tsp parsley

Method
 

  1. Preheat oven to 400°. While oven is preheating, heat 1 Tbsp olive oil in a cast-iron skillet, over medium-high heat.
  2. Sear pork loin in hot oil, approximately 2-3 minutes per side. Turn off heat and add veggies.
  3. Drizzle remaining tablespoon of oil over veggies and season with garlic salt and parsley. Transfer skillet to oven and cook for 15 minutes, or until pork reaches an internal temperature of 150°.
  4. Remove pork from skillet and cover with foil. Turn oven temperature up to 425°.
  5. Return pan to oven and continue cooking until potatoes are soft and carrots are tender-crisp, about 10-15 minutes longer.
  6. Slice pork and top cooked veggies, and serve while hot. Refrigerate any leftovers.
