Quick Kielbasa and Rice Skillet

Ingredients
  

  • 15 oz Polksa Kielbasa
  • 1 medium-sized orange bell pepper
  • 1/2 yellow onion chopped
  • 2 garlic cloves minced
  • 1 cup chicken broth
  • 3 cups MinuteĀ® Rice
  • 3 cups water
  • 1 tsp salt
  • 1/2 tsp black pepper
  • parsley for garnish

Method
 

  1. In a medium saucepan, bring water to a boil.
  2. Add rice, cover, and remove from heat. Allow to sit for 5 minutes.
  3. Meanwhile, cut Kielbasa into bite-size slices and saute in a large skillet over medium-high heat, for 5 minutes.
  4. Add peppers, onion and garlic and cook for another 5 minutes.
  5. To frying pan, add broth and bring to a boil. Then stir in cooked rice, salt and pepper. Heat through for another 5 minutes.
  6. Garnish with parsley, and serve.
