Thai Peanut Noodles

Ingredients
  

  • 8 oz Annie Chun's Pad Thai Rice Noodles
  • 1 Tbs olive oil
  • 1 cloves minced garlic
  • 1/3 cup matchstick carrots
  • 3/4 cup Thai Peanut Sauce
  • 1 Tbs chopped salted roasted peanuts for garnish
  • 1 Tbs chopped green onions for garnish

Method
 

  1. Cook Pad Thai noodles according to package directions.
  2. While noodles are cooking, heat oil in a large skillet, over medium-high heat. Toss in garlic and carrots and sauté for 3-4 minutes, or until carrots just start to get tender.
  3. Drain noodles and toss with sauce and veggies in a large serving bowl. Garnish with green onions and peanuts. Serve right away and refrigerate any leftovers.
