Clean Eating On the Go: Picnic Perfect Chicken Salad and Visa Gift Card Giveaway

I am now a few months into my goals and wanted to share a final update on my progress and what I have learned thus far and tell you about my exciting blog giveaway to win a Visa Gift Card!

This summer has been a lot of good clean fun for our family! As part of my commitment to “clean it forward” the kids and I have spent a lot of summer mornings working in our garden, playing outside and baking together in the kitchen. Together my kids and I have learned a lot about caring for our little garden, working together outdoors and just doing things a little more organically and baking more “from scratch” in the kitchen. Not only has our garden and kitchen been fruitful, but the memories we have made in the process have been extremely bountiful!

Clean Eating while on a Picnic

This summer has also taken us on some amazing outdoor adventures with countless trips to the river, the park, camping and even a family vacation to the beach! Because we have come so far in our commitment to be healthy this summer, I didn’t want our family trips to throw off our clean eating efforts. So to take clean eating “on the road” I have been packing a lot of healthy picnics this summer. With our perfect picnic companion the Toluca Cooler Tote from Picnic time. I love this tote because it keeps all of my fresh, healthy goodies nice and cool, with a touch of elegance that makes you feel like you are carrying a tote more then a cooler. One of my favorite clean eating picnic recipes has been my Picnic Perfect Chicken Salad on Pitas. This healthy and tasty recipe is perfect for picnics because it is so easy to make up ahead of time and bring a long. At picnic time I use it to fill up some sliced whole wheat pita pockets for a no mess, delicious picnic meal. Its also packed with protein, so it leaves my family is full and ready for more fun adventures!

Picnic Perfect Chicken Salad

Ingredients Method

Ingredients
  

  • 3-4 cooked chicken breasts
  • 1 cup red grapes sliced in half
  • 1 cup shredded cheese
  • 1/2 cup of sliced almonds
  • 1 1/2 cups plain nonfat Greek yogurt
  • Salt and pepper to taste

Method
 

  1. Shred chicken breasts
  2. In large bowl mix chicken, grapes, shredded cheese, almonds and salt and pepper
  3. Mix in Greek yogurt. cover and chill in fridge for at least 1-2 hours before eating.

After I have whipped up a batch of my chicken salad, I love to throw all of the dishes in the dishwasher and with some Finish Quantum Power & Free Capsules.     What I take to a picnic depends on several things – who will be there, where it’s at, and if there’s a “theme”. My daughter and her friends love turning things like picnics into major outings. My daughter and her friends (and yes, me, too) love Japanese anime and manga and are very into the Japanese culture, including food. So, we like to make things like sushi or onigiri (rice ball).

    My favorite go to picnic item is my veggie pasta salad. I use a lot of veggies, squash, zucchini, broccoli, tomatoes etc, plus, use an Italian dressing. It stays fresh and crispy, great for outdoors 🙂

    The best picnic meals are those that bring us back to our youth. For my mother it was always fried chicken and then the salads. Coleslaw, macaroni and potato salads. Dessert was watermelon which is easy to cut and serve at the picnic site

    We take dinner picnics down to the Lake/beach relax and then enjoy the sunset and the seagulls taking off in unison one minute before for the night flight to whereever it is they go until dawn.

    We take pasta and grain salads, sandwiches, pita and dips/spreads of all kinds, fruit salads, cheese & crackers, grapes and cherries ~ all kinds of things are great on a picnic!
