A week or so ago, I told you all I would post my mother-in-law’s homemade Chicken Noodle Soup recipe. It is so tasty! When I say homemade, I mean homemade noodles and all. Don’t be intimated though – it’s not too challenging and so worth it. Let me know if you decide to try it! For the picture above, I actually cooked a whole chicken and shredded it for this recipe, but it works either way. It’s what I had on hand. This is a very inexpensive meal to make.
Homemade Chicken Noodle Soup
Ingredients for Stage 1:
- 2 Cups diced cooked chicken
- 1 Cup diced or sliced carrots
- 1 Cup diced or sliced Celery
- 1 Medium onion diced
- 1 Bay Leaf (I add 1 or 2 of these for more flavor)
Step 1:
Cook vegetables in in 2 1/2 Cups chicken broth until veggies are tender.
Fresh Homemade Noodles
Ingredients:
- 1 egg
- 1 Tablespoon milk
- Approx. 1 Cup flour
- 1/2 teaspoon salt
- 2 Cups chicken Broth (Can be fresh or canned)
Step 1 for Noodles:
Beat egg and milk. Mix in flour and salt- adding flour to make a stiff dough ( not sticky).
Step 2
Roll out on floured board. Slice into noodles with a noodle slicer or a pizza cutter. They can be as thin or thick as you’d like, but they will expand slightly.
Step 3
Drop into boiling broth and cook until tender ( about 10 minutes).
Step 4
Add vegetable mixtures, including broth and salt and pepper to taste.
Optional Fresh or dehydrated parsley to garnish

thats just about the same as my moms/grandmas recipe….the best noodles you will ever eat! When I make them though, its a royal mess in the kitchen. You can do beef as well, just cook it and shred it up same as the chicken. Good eating! I love these!
