Meatless Monday: Marinara Sauce Recipe

Meatless Marinara Sauce

A couple of weeks ago, there was an awesome deal on Roma Tomatoes, so I thought I would try out a homemade Marinara Sauce! I fell in love with this recipe I found.

 

Ingredients

3 Tbs olive oil
1 onion, chopped
6 garlic cloves, minced – I diced it finely because I am hoping Santa will bring me a Garlic Press
1 Tbs dried basil, but fresh would be even better!
2 tsp dried oregano – Once again, fresh if you have the option
1/2 tsp crushed red pepper flakes
1 6-oz can tomato paste – You can play with this in a variety of ways, depending on what you have on hand. Use two cans for a thicker sauce or use tomato sauce if it’s all you have on and it will still be grand.
3+ Roma Tomatoes, chopped – Can use canned as well
2 tsp sugar
1 tsp salt – I typically add more
fresh ground black pepper, to taste

Directions:

  1. In a large pot or skillet, heat oil over medium-high heat.
  2. Add in onions, garlic, dried red pepper flakes, basil and oregano. Saute for about 3-4 minutes.
  3. Stir in the tomato paste and cook for 2-3 minutes.
  4. Add in the Roma tomatoes and simmer uncovered over low heat for 1-2 hours, stirring occasionally. The longer you cook, the more time the flavors have to blend.
  5. Season with salt and pepper and add in sugar if desired.

Top your favorite spaghetti or pasta with this yummy sauce. Can garnish with fresh Parmesan Cheese and a side of bread! Mmmm!
