Cauliflower Pizza Crust for the Whole Family – Gluten Free and Fabulous!

For last week’s Pinterest Challenge I made the Cauliflower Pizza Crust, which happens to be Gluten Free – inspired by Eat.Drink.Smile. It was so tasty that I decided to make it again tonight, but make a more kid friendly version of it. One head of Cauliflower makes 3 crusts, so I had 2 crusts worth leftover. I cut one pizza into 4 slices, with 2 slices per serving. I calculated this on Weight Watchers and a veggie pizza is 4 pts for one slice and 7 pts for 2 slices. I cut back on the cheese a little this time and it still worked out fabulous!

So this time, I decided to make the pizzas more oval so that I could fit two crusts on one large cookie sheet. Worked great! I made a veggie pizza for the grownups and a Hawaiian Pizza for the kids. For being healthy AND Gluten Free, this was a huge hit! Everyone ate it and said it was delicious! I actually think the cauliflower crust could pass as bread. Different texture of course, and serves more easily with a fork, but YUMMY!

For convenience, I thought I’d post the recipe again:

Cauliflower Crust Pizza

1 cup cooked, riced cauliflower
1 cup shredded mozzarella cheese
1 egg, beaten
1 tsp dried oregano
1/2 tsp crushed garlic
1/2 tsp garlic salt
olive oil (optional)

pizza sauce, shredded cheese and your choice of toppings

Ricing the Cauliflower:

Take your head of cauliflower and remove the stem and leaves. Shop florets into chunks. Place chunks into a food processor and pulse until the cauliflower looks like grain. Do not over mix, or it will puree. Cauliflower can be grated if you do not have a food processor. You will only actually be using one cup (this yields about 3), so you don’t have to chop it all if you aren’t prepared to make some extra crusts.

Place riced cauliflower in a microwave safe bowl and microwave for 8 minutes. Do not add anything here!

Making the Pizza Crust:

Preheat the oven to 450°, and spray cookie sheet with cooking spray.

In a medium bowl, mix together cauliflower, mozzarella cheese and egg. Add oregano, crushed garlic and garlic salt, stir.

Transfer mixture to the cookie sheet and press out to about a 9″ round. This is a lot easier than you might think. Now you can brush the surface with olive oil if you would like – for help with browning, but not necessary. I did it the first time and not the second.

Bake for 15 minutes. Remove from oven and top with pizza sauce and toppings, then with the cheese. Depending on the toppings you use, you may want to precook them, since this is just a broil. I precooked the onions, but that was it.

Place pizza until the broiler and cook just until the cheese is melted.

**Such an easy pizza to make, and so worth it! Seriously – for me to make something twice in a week, it must be easy and tasty!!!
