Skinny Poolside Dip

As I mentioned before, you can use whatever dippers you’d like, but let me tell you why  I love Fritos for my dipping pleasure. These chips are sturdy and can handle a nice big scoop of all that goodness going on. Plus, I love the little bit of added crunchy saltiness. You can even stock up and buy a case on Amazon (my fave)! Give it a try, and I promise you won’t regret it!

Ingredients Method

Ingredients
  

  • 1 red pepper diced
  • 2 jalapeños unseeded and diced
  • 1 can of corn or 1/2 a 16 oz bag of frozen corn
  • 1/2 can diced olives
  • 16 oz fat-free cream cheese softened
  • 1 packet Hidden Valley Ranch dip seasoning mix.

Method
 

  1. Mix together all ingredients and serve with crackers, chips or raw veggies.

    I bet it would be good with some spinach mixed in, I didn’t think I liked spinach dip until after the last family reunion My aunt made me take some home… I ran out of the lil bread so I took hotdog buns ripped them in half and toasted on our bagel setting, OMG I ate it all and wanted more

    Could you tell it was fat free cream cheese? I have made things with ff cc before and thought that it wasn’t very good. Low fat usually works much better but I would love it if this dip really works with ffcc….thoughts??

    That’s tough to say Mallory, since this is a dip and people eat varying amounts of dip. It makes a pretty good sized batch though!

    I made this dip but added 3/4 cup chapped wilted spinach, scallions, paprika, and garlic powder. Very good, I think I will use a little less corn next time. I also think adding some shredded cheddar would be good, but not as healthy lol!

    I recommend not using fat free cream cheese. I Personally don’t like the taste and fat free Isn’t necessarily healthy. Low fat works perfectly. This dip is so good. LOVE it with triscuits.
