Dinnertime planning and prep can be a stresser in the life of a busy mom. However, I think that mealtime with the family can be very rewarding and also important for cultivating those familial relationships. It’s getting dinner on the table that is sometimes the hard part. Other times, the hard part may be getting the family altogether at one time and place. As we start sports back up, and other extra curricular activities, we don’t seem to have an abundance of time. This means that this mom needs some quick and easy meal solutions!
I headed to Sam’s Club on a rainy day last week to get some dinner inspiration. I took Bea and my dad, and we went in around lunchtime in hopes of catching some free samples and ideas.
We struck gold with a Tyson and Prego demo. The delicious pairings of a breaded chicken breast and Prego pasta sauce, topped with cheese, looked like a winning meal that my kids would love. One of the things I love about the Sam’s Club demos is that for one you get to sample what you’ll be buying, and two, they tell you exactly where to pick those items up!
With scouts and gymnastics on the same day last week, I was definitely in need of a meal that took little to no prep. Of course, there is always the option of going with a frozen entree, but I don’t particularly like to do that. I really like being able to throw a meal together quickly, and have it look homemade! Those meals typically taste better too! I decided to make something very similar to the Sam’s Club demo.
I purchased the Tyson Chicken Breast Tenderloins (breaded) and popped them in the oven. While the chicken baked, I cooked up some spaghetti on the stove, and heated up a little Prego pasta sauce. In the last 5 minutes of baking, I topped the chicken with a slice of cheese and a little Prego sauce. When the chicken was finished cooking, I placed it on top of some spaghetti and sauce, and topped with a little freshly grated parmesan cheese. I served it up with some asparagus that I cooked in the microwave, and dinner is served!
Dinner was a hit and everyone gobbled up every bite!

I just love Sam’s Club demos, I would have made this in a heartbeat; I’m definitely going to keep my eyes open for the breaded Tyson Tenderloins!
