Have you ever eaten a cookie that almost felt like there was a delicious and fun cooling sensation when you bit into it? It really is a unique feeling and one that you get when you bite into these Brown Sugar Coconut Oil Cookies. These cookies were adapted by Love Veggies and Yoga, and the fantastic thing about them is that you get that great coconut oil that is so good for you! Combined with brown sugar (my fav), you really get the ultimate soft cookie. Because you are using coconut oil, you don’t get a heavy rich flavor. I think they are nice for a little change!
Brown Sugar Coconut Oil Cookies

Total time:
Serves: 15
Ingredients
- 1/2 cup coconut oil, softened – not melted
- 1 cup brown sugar, packed
- 1 large egg
- 2 Tbs vanilla extract
- 1 Tbs unsulphered mild to medium molasses
- 1 3/4 cup all-purpose flour
- 2 tsp corn starch
- 1 tsp baking soda
- 1/4 tsp salt
Instructions
- In a mixing bowl, combine coconut oil, egg, sugar and beat on medium-high speed. Cream until light and fluffy, 4 to 5 minutes.
- Scrape down the sides of the bowl, add the vanilla, molasses, and beat until just combined, 1 to 2 minutes.
- Add the flour, corn starch, baking soda, and salt, and mix about 1 minute.
- Scoop 2 heaping tablespoons per cookie, and place dough on a large plate, and slightly flatten each mound. Very important to get the dough mounds in the exact shape you want to bake them in because after chilling, flattening or re-shaping them is very difficult. Cover with plasticwrap, and refrigerate for at least 2 hours; and up to 5 days. Chilling is a must!
- Preheat oven to 350°F and grease or line a cookie sheet.
- Place dough on baking sheet, spaced at least 2 inches apart. Bake for 8 to 10 minutes, or until tops have just set.
- Allow cookies to cool on the baking sheet for 5 to 10 minutes before moving. Store cookies in an airtight container at room temperature for up to 1 week, or in the freezer for up to 3 months.

These look great! I have seen something similar (here: http://www.funnytummycafe.com/2013/01/31/aces-brown-sugar-drops-with-browned-butter-glaze/) but still haven’t braved into trying them yet. I’ll have to flip a coin to see which is first!
