Healthy Start Pancakes
I have a picky eater in my house. Since there are very few things he likes to eat, I try to make those things as healthy as possible. Since pancakes are a big staple for him, I decided to go about trying to make a really healthy and hearty version that will keep him going throughout the day. After much trial and error I came up with this version that I think is healthy and pretty yummy! They freeze great, so I like to make up a big batch and stick them in a freezer bag. On a busy morning I stick one in the microwave making an easy breakfast that I can feel good about feeding to my kids!
- 4 eggs
- 4 cups milk
- 2 cups all natural, no sugar added applesauce
- 1/4-1/2 cup of sugar (optional- I think it tastes fine without it, but can be added to make them a little sweeter)
- 4 cups whole wheat flour
- 1 1/2 tsp baking soda
- 1 1/2 tsp salt
- 1/2 cup milled flax seed (can be omitted if you choose)
- 2 Tbs Cinnamon
- Mix eggs, milk and applesauce
- Slowly add flour and mixing well
- Add remaining ingredients
- Cook on a griddle or pan, flipping after golden brown
- Enjoy! I like to serve with 100% pure maple syrup or jam
