Slow Cooker Berry Cobbler
With summer comes luscious ripe berries that are great for throwing into a variety of recipes. I have yet to grow a thriving blueberry bush – although I have tried. One of these summers I will attempt it again. However, my mom has some awesome berry bushes that have done well for numerous years. I actually find some pleasure in spotting the perfectly ripe berries and picking them for some future recipe. Most of the berries are frozen for future recipes, while some get thrown right into something tasty.
What summer is complete without a berry cobbler? Cooking cobbler in the slow cooker is a breeze and I love how it doesn’t heat up my already hot kitchen in the summer!

Slow Cooker Berry Cobbler
Ingredients
- 1 cup sugar
- 2-3 Tbs cornstarch
- 1 Tbs lemon juice
- 1 Tbs butter
- 3 cups berries
- 1 2/3 cups flour
- 1 cup sugar
- 1 Tbs baking powder
- 2/4 tsp salt
- 1 cup milk
- 1/2 cup butter
- 1 egg beaten
- Reynolds Slow Cooker Liner
Instructions
- In a medium saucepan stir sugar, cornstarch, lemon juice and butter into berries and simmer over medium heat til sugar is dissolved, well blended and juicy. Stir constantly to prevent burning.
- Combine remaining dry ingredients in a mixing bowl.
- In microwave, melt 1/2 cup butter and stir into milk, then add beaten egg. Add to dry mixture and stir until crumbly.
- Line slow cooker with Reynolds Slow Cooker Liner and pour berries into the liner.
- Sprinkle topping mixture over berries and cook on high for 2-3 hours.
- Serve with ice cream or whipped topping.
