Casseroles are a staple in every busy household, and if they’re not, they should be! Casseroles don’t always get the positive attention that they deserve and I am here to tell you that my family loves them! What is not to love about a meal that can be made in one dish a lot of the time, can be made ahead on those busy days, and tickles everyone’s taste buds?
Do you ever find yourself rushing around to find something to fix for dinner, RIGHT before eating time? This has been me on so many occasions! Between extra curricular activities that the kids have, my errands and work, and homework, some days it’s better to plan ahead. While I am not always great at planning ahead, I feel so much relief when I do. The best way to plan dinners ahead is by preparing Slow Cooker meals or casseroles!
There are many casseroles that only dirty one dish – the one it’s cooked in, which can save you a lot of time and dirty dishes. The lovely thing about casseroles is that you can assemble it whenever you have a free moment, and cook it when it’s close to eating time. Casseroles hold up well when made earlier in the day, the day before, a few days before, etc. If made too far in advance, I do recommend freezing the meal, and thawing before putting into the oven. Casseroles are also a great way to sneak in veggies, protein, and pretty much anything else you want! Combine your carb, protein, and vegetable all in one yummy dish!

I made this in the Crock-Pot and put a layer of the stuffing on the bottom as well as on the top. I put a little of the sauce on the bottom layer of stuffing to prevent it from drying out. Omgosh this is incredible!!!
