Being married to an Idaho boy means there have been a lot of potato dishes throughout our life together. He grew up on spuds and continues to love them. It actually works out quite nicely because I am a big potato fan myself. While I love a good ol’ baked potato, I actually love coming up with different ways to enjoy potatoes.

Convenience and healthy foods are something I want to be signed up for, always!
Depending on what stores you have to shop from will determine the McCain selections that are offered. If you’re lucky you will have a wide selection. Regardless, you won’t be disappointed with what you get to try! In my opinion, any variety of the potatoes are great to eat as is, or you can dress them up. I would often serve their sweet potato fries, Smiles or many other fry varieties, as a healthy side. Sometimes though, I like to get creative and throw them into a casserole or main dish. Tonight for example, I used the Smiles, which are like a french fry with mashed potatoes on the inside (and natural), to top a quick and easy casserole. It was my spin on a Tater Tot Casserole, and it was ready in less than 30 minutes!
My kids LOVE eating the Smiles because delicious bites of goodness wrapped into a smiley face! Obvious reasons to love them right? Well tonight we got to sit around the dinner table, as we do most every night, and enjoy a Smiles Casserole that was topped with Smiley Faces! Aside from the fun we have at dinner, it tasted great too! You can get the recipe below.

“Load up on groceries your family loves, and bring naturally good moments to the dinner table every time you serve McCain Potatoes.”
- 1 lb ground beef
- 1/4 onion, chopped
- 1 tsp garlic powder
- 1/2 tsp salt
- 1 can green beans, drained
- 1 can Cream of Mushroom Soup
- 1/2 cup sour cream
- 1 bag of McCain Smiles
- 1/2 cup shredded cheese
- Preheat oven to 425°.
- In a large skillet over medium-high heat, saute the beef, onion, garlic powder and salt until meat is no longer pink.
- To the meat, add the green beans, soup and sour cream. Stir until combined.
- Smooth out meat mixture and top with frozen Smiles, in a single layer – covering the entire dish.
- Bake casserole in original skillet for 15 minutes. Sprinkle the top with cheese during the last 3 minutes of baking.

Looks yummy 🙂 I’m from Maine and right now our farmers are harvesting the potato crop. Many of those spuds will go to McCain’s. They’re one of the biggest employers around here. I have friends that work there and they are nice enough to get me “seconds” for cheap.
