Yesterday marked one month until the local elementary schools are out for summer. I am a little stunned that we are this far into the year; I’m not sure where it went! Last week we even had a couple of days in the 90s! Can someone please tell summer to hang on for just a tad longer, because I’m not ready? Sure, I’m ready for all of the fresh produce, days with no homework (and possible nagging), and freedom to do what I’d like with my kiddos, but am I ready to have my kids 24/7 for days on end? Or the 100° weather? I think not. There is a weekend each May that I look forward to, because I feel it almost preps me for summer. Memorial Day weekend is a nice breather before the end of the school year push, projects and long summer days. I find it to be a nice way to relax, break in the swimming pool and enjoy good food and family.
Memorial Day has frequently been a big grilling day for my family, and I’m sure this year will be no different. I can’t think of a Memorial Day BBQ that didn’t include potato salad as one of our sides. I’m sure many of you can relate, but this year I’d like to encourage you to put a twist on your Memorial Day sides with this . The MIRACLE WHIP Dressing really adds a sweet and tangy flavor that won’t go unnoticed, but the addition of kale and apples just makes ya say, “WOW, I never would have thought of that!” That’s what you want your guests to take away from your outdoor party, right?
Because you will likely be busy cooking up treats and eats, I’m sure you could handle a recipe that is quick and easy to prepare. I am often hesitant to make potato salad myself because I find it to be time consuming. I think that with the use of new potatoes in this recipe, cooking time is sped up since you won’t need to peel potatoes (hallelujah)! This MIRACLE WHIP Kale & Apple Potato Salad recipe takes just 20 minutes! Make ahead and chill until the guests arrive.
MIRACLE WHIP Kale & Apple Potato Salad
Ingredients
- 3/4 cup MIRACLE WHIP Dressing
- 1 Tbs GREY POUPON Dijon Mustard
- 2 tsp cider vinegar
- 2 lb new red potatoes cut in quarters, cooked & cooled
- 4 cups coarsely chopped kale
- 1/2 cup thinly sliced red onion
- 2 apples cored and diced
Instructions
- In a small bowl mix dressing, mustard and vinegar until blended.
- Combine remaining ingredients in large bowl; Add dressing mixture and mix, careful not to mash potatoes.
- Refrigerate several hours or until chilled.
- Sprinkle with poppyseeds or diced, cooked bacon, if desired.
