Since becoming a single mother, I have admittedly turned to fast food more times than I should count. I feel like I have so many balls in the air and I frequently wonder if I’m doing anything all that well. I get most things done at least! What I have realized is that I need to simplify life and have a number of go-to dishes that require few ingredients (in case grocery shopping gets pushed back), and not much prep time. Ideally, I like to have dinner prepped and in the oven while I take my oldest to soccer. Then we can come home and have dinner ready to go. My Easy Enchilada Casserole is one of those dishes. I think every busy household needs recipes like these on hand.
Most everyone loves enchiladas in some form, but layering the ingredients and creating a casserole is a tasty and easy alternative. For any Mexican dish you want to create at home, you can pick up tasty and affordable La Morena products at retailers nationwide. I picked mine up at Vallarta Supermarkets. La Morena is great because you can count on their products being an authentic, Mexican food brand that provides the ability to incorporate a true taste of Mexico into your own home cooking
You can cook up your own chicken, or if you’re really pressed for time and easy (like I often find myself), then pick up a rotisserie chicken, remove the skin and start shredding.
For this Enchilada Casserole recipe, you can use La Morena’s Red Mexican Sauce, or if your store doesn’t carry that, then the Chipotle Sauce. Alternate layers between whole corn tortillas, chicken, sauce, shredded Mexican blend cheese and black olives. Feel free to throw in any extra toppings your family might enjoy. Next time I make these, I am going to add the La Morena beans I picked up.
It is always quite satisfying when my kiddos and I can sit down as a family and enjoy a meal together. Even better when I can feel good about the fact that I prepared the meal, and the kids really like it!

Easy Enchilada Casserole
Ingredients
- 1 can La Morena Red Mexican Sauce or Chipotle Sauce
- 1 rotisserie chicken
- 6 6 inch corn tortillas
- 2 to 3 cups shredded Mexican Blend Cheese
- 1 small can sliced olives
Instructions
- Preheat oven to 375°.
- Begin with just enough sauce to cover the bottom of the casserole dish.
- Start layering the casserole with 2 tortillas across the bottom, ⅓ of the chicken and ⅓ of the sauce. Sprinkle ⅓ of the cheese and ⅓ of the olives over the top.
- Repeat layers two more times.
- Bake 30 minutes uncovered, until bubbly and cheese has melted.
