I recently needed a fun recipe for a family gathering so I decided to try one of the heart-healthy dishes from the Campbell’s Kitchen Website. Because my entire family loves tacos, I decided to try their recipe for Slow Cooker Chicken Tacos. This recipe was unbelievably easy to throw together and really pleased a crowd.

I cooked the chicken mixture in the slow cooker, so when it was meal-time all I had to do was pull out some tortillas, topped with chopped lettuce, diced avocado, and non-fat plain Greek Yogurt for easy and delicious tacos.
I think I could also change things up by layering lettuce, avocado, black beans, corn, and the shredded chicken along with a few tortillas chips for a bright and healthy chicken taco salad.

Slow Cooker Chicken Tacos

Ingredients
1 1/2 pounds skinless, boneless chicken breast halves
1 medium green bell pepper, sliced (about 1 cup)
1 large onion, cut in half and sliced (about 1 cup)
2 cloves garlic, minced
1 can (10 3/4 ounces) Campbell’s® Healthy Request® Condensed Tomato Soup
2 teaspoons ground cumin
1/4 teaspoon ground chipotle chile powder
3/4 cup Pace® Picante Sauce

1. In a 4-quart or larger slow cooker, mix green pepper, onion, garlic, soup, cumin and chile powder.

2. Add the chicken to the slow cooker and turn in sauce mixture to make sure all pieces are coated.

2. Cover slow cooker and cook on low setting for 7-8 hours. You will know it is ready when chicken can be shredded easily with a fork. Remove the chicken to a cutting board. Shred chicken then return to slow cooker on “warm” setting.

3. Stir in the picante sauce, and keep in slow cooker on warm until ready to serve

3. Serve the chicken mixture in warm tortillas with lettuce, avocado and your favorite taco toppings.
