Once I had my Foster Farms Simply Raised breast fillets and drumsticks in my cart, I picked up some fresh lemons, baby carrots and potatoes and headed home to put it all together in the slow cooker. After letting it cook all day while I was busy getting the rest of my errands done and picking up and dropping off kids here, there and everywhere it was so nice to come home to a delicious and fresh meal that the whole family was excited to enjoy!
Slow Cooker Lemon Chicken with Sweet Baby Carrots and Potatoes
Ingredients
- 5-6 pieces of Foster Farms Simply Raised Chicken
- 2-3 lemons
- 1 small package fresh baby carrots
- 8 medium potatoes
- Lemon pepper
Instructions
- Fill bottom of a medium sized slow-cooker with chicken breasts and drumsticks
- Cut washed potatoes into quarters and add to slow-cooker along with baby carrots
- Squeeze lemons and drizzle juice over over the potatoes and carrots
- Add 2 cups of water to slow cooker
- Cook 7-8 hours on high setting
- Serve on individual plates, season with lemon pepper to taste.
