This past week has been a tad hectic. Nothing terrible, just a lot of little extras… Extra activities, appointments and errands that added up to a busy week. By the end of the week I was feeling a little frazzled and wanted to prepare a healthy and delicious weeknight dinner that would be easy to prepare and get us all sitting at the dinner table together.

Ingredients
  1. 5-6 pieces of Foster Farms Simply Raised Chicken
  2. 2-3 lemons
  3. 1 small package fresh baby carrots
  4. 8 medium potatoes
  5. Lemon pepper
Instructions
  1. Fill bottom of a medium sized slow-cooker with chicken breasts and drumsticks
  2. Cut washed potatoes into quarters and add to slow-cooker along with baby carrots
  3. Squeeze lemons and drizzle juice over over the potatoes and carrots
  4. Add 2 cups of water to slow cooker
  5. Cook 7-8 hours on high setting
  6. Serve on individual plates, season with lemon pepper to taste.

  • I’ve gotta try this recipe. I love lemon Chicken. It’s nice to know that Foster Farms doesn’t have antibodies and 100% Natural. When I make my lemon chicken, I’m going to make sure I purchase Foster Farms brand. Thanks for the recipe.
