Not Your Typical Oven Roasted Potatoes

This weekend I was asked to take a side dish to a large BBQ at church. I knew others would bring macaroni salad and potato salad recipes, but I wanted to do something a little different. We had some cooler days this past week so I decided to take advantage of that and use my oven. I sure have loved all of the recipes that haven’t required my oven, but I was missing some good ol’ oven roasted potatoes. Being carb free for a time only made that craving stronger.

Most of us have probably chopped up some russet potatoes and thrown them in the oven for some version of roasted potatoes. At one time or another, right? Depending on how you season the potatoes, the taste may vary slightly. Well, I’ve discovered away to really step up those Oven Roasted Potatoes. While this recipe is quite simple and seems somewhat ordinary, these are not your typical oven roasted potatoes. 

Tasteful Selections White Delight Potatoes

My key ingredient comes from none other than Tasteful Selections. I believe all of their potato varieties make an excellent roasted version of the dish, but for that melt-in-your-mouth feeling we are going for, I recommend the White Delights Potatoes. Unlike regular russet potatoes, the skin is so light and makes peeling unnecessary. My second and key ingredient is fresh lemon thyme (straight from my garden is my favorite). The smell alone is enough to make your mouth water, but paired melted butter – oh my!

To finish off flavoring and get that soft, yet crispy, potato we are going for, you will need minced garlic and chicken broth. I think it is the chicken broth that sets this recipe apart from other roasted potatoes, and the ease of Tasteful Selections potatoes is what makes this recipe so good.

Back to the BBQ. I took my not so typical oven potatoes and they were a huge hit. Let’s just say the one 28oz bag of potatoes was not enough to go around, because they were the first side dish to go! Can’t wait for more cool days so I can turn my oven on again.

[Not Your Typical] Oven Roasted Potatoes

Flavorful oven roasted potatoes that are crispy on the outside and soft on the inside.

Ingredients Method

Ingredients
  

  • 28 oz bag of Tasteful Selections White Delights potatoes
  • 3 Tbs butter melted
  • 1 Tbs chopped fresh lemon thyme
  • salt and pepper to taste
  • 1/2 cup chicken broth
  • 2 garlic cloves minced

Method
 

  1. Preheat oven to 475°.
  2. Prepare potatoes by slicing them into thirds - just halve the smaller potatoes.
  3. Pour potatoes into a 1.5 -2 qt casserole dish, or pan.
  4. In a small bowl, combined butter, thyme, and salt and pepper. Pour over potatoes and lightly toss to coat.
  5. Arrange potatoes into a single layer, in dish.
  6. Bake for 12 minutes.
  7. Remove dish from oven and flip potatoes over using a spatula. return to oven for another 12 minutes..
  8. Remove dish from oven and flip potatoes one more time before adding chicken broth and minced garlic. Return to oven and cook for a final 12 minutes.
  9. Serve while warm.

    I love potatoes with alfredo sauce, chicken pieces and sometimes adding bacon. Yum!

    My sister-in-law makes salt crusted potatoes. They look like they have a casing of salt on the outside, which you would think would be inedible, but they are delicious.

    I would prepare the potatoes with some olive oil and cover them with salt and pepper and Parmesan cheese!

    I would sprinkle these potatoes with garlic powder and grated Parmesan cheese.

    Most grocery stores carry them near the russet potatoes.
