We have been in school for a few weeks now, and the kids are beginning to tire of sandwiches. I think most parents face this dilemma each year, and then it comes time to be extra creative. Using the the new Rubbermaid Lunchblox kits has helped my creativity flow – especially since I got the Salad Kit. My kiddos don’t eat salad, so I’ve forced myself to occasionally come up with lunch box ideas without sandwiches, that fit into the Rubbermaid Lunchblox Salad Kit.
Here are the ideas I’ve come up with:
Pasta with red or white sauce. Cook extra noodles for dinner one night, and toss them with a teaspoon of butter to avoid stickiness. Break them out in the morning before school, and use one of the smaller containers for holding the sauce. They will be room temperature by lunchtime. For protein, you can use a meat sauce, or toss in deli ham and cheese, or whatever fixings your kids like. In the extra containers in the Lunchblox kit, add a fruit of your kids’ choice, and a treat.
Nachos! My kids love nachos, so we fill the big compartment with chips, and use the smaller containers for the toppings of their choice – queso (or shredded cheese), salsa, olives, sour cream, etc.
Bean and cheese burritos. Use the large compartment for holding the tortilla(s), and feel free to stick an applesauce or yogurt in the bottom, because there will be room. We use the smaller containers up top for a blend of rice, beans and cheese.
