Easy Fried Mozzarella Bites

As we near the holidays I am finding I have too many busy, frazzled kind of days. The kids are getting older, which means more band and orchestra concerts, ballet recitals, parties, and the list goes on. We haven’t had a quiet evening at home all week, but we’ve managed to find the Christmas spirit through it all. I simply love this time of year, and all of the holiday parties are just beginning for my family. Around here, we usually have pot luck parties, where everyone brings a yummy dish or two to share. Because of my busy schedule, I needed to come up with a simple recipe to please the masses. Really, these fried mozzarella bites are so easy that I am embarrassed I haven’t made them until now.

Progresso Bread Crumbs
You know how there are just certain staples we keep in our cupboards, to create a variety of meals? Progresso™ Bread Crumbs are one of those staples for me. I typically keep the plain and herb flavored bread crumbs on hand at all times. They are great for topping casseroles, creating a scrumptious homemade meatball, and breading a variety of things, such as my Fried Mozzarella Bites.

Fried Mozzarella Bites

My kids love cheese sticks, and they are one of the few nutritious snacks I can get them to eat, so I always keep my refrigerator stocked with them. For this recipe, all you need to do is cut up those popular mozzarella cheese sticks, into smaller cubes. Dip them in an egg that has been beaten, then in the Progresso™ Bread Crumbs, before frying them in a little canola oil. Voila!

Easy Fried Mozzarella Bites with Avocado

 

If you really want to please your taste buds, then cut up some fresh avocado and stick a toothpick through the mozzarella bite and avocado. Yum!
