Healthier Rice Pudding with a milk that shouldn't give you tummy problems. The ultimate comfort food recipe!

You may be wondering how this is a healthy recipe. Well, dairy doesn’t have to be unhealthy, you know.  Use the 1% a2 Milk®, and sweeten your dish with honey – YUM! I hope you enjoy this dish as much as my family does!

Because you truly should have a beautiful dish to serve your rice pudding in, I just have to share my favorite go-to casserole dish. These ruffle top bakeware pieces are so cute and are super sturdy to withstand lots of wear.

Ingredients Method Notes

Ingredients
  

  • 2 cups cooked short grain rice
  • 2 cups milk
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp cinnamon optional
  • 1/3 to 1/2 cup honey depending on desired sweetness.
  • ground nutmeg for sprinkling

Method
 

  1. Preheat oven to 300°. And while oven is preheating, place a 9 X 13" pan half filled with hot water in the oven. You will use this as a water bath for baking the rice pudding.
  2. Whisk milk, eggs, cinnamon and vanilla in a bowl. Add the honey and stir. Honey will not incorporate well.
  3. Stir in the rice and keep gently stirring to blend in the honey.
  4. Pour into a casserole dish that will fit into the 9x13" pan of water you have warming in the oven. Sprinkle generously with nutmeg.
  5. A Large oven safe bowl or baking dish will work well for baking the rice pudding in the water bath. This serves to keep the rice pudding nice and creamy.
  6. Place the casserole dish into the 9x13 water bath and bake for 45 - 60 min until knife inserted comes out clean. Serve warm or cold.

Notes

If you love raisins, by all means add them (or leave them out, as I prefer). You can also add nuts and chopped dates before baking.

    Why is there nutmeg ? And no cinnamon in the instructions but vise versa in the ingredients? And I’m confused as to what you use to bake the rice in as it changes half way through to a lg baking dish or bowl from being a casserole dish ?

    Hi Chris, I’m not sure where the confusion is because the cinnamon is listed in the instructions and in the ingredients. I didn’t list the nutmeg in the ingredient list as it’s just used for sprinkling over the top, but I went ahead and added it to the ingredient list as well, to avoid confusion. As for the baking dish, I have the same dish throughout, but put a single-serving in a small bowl, to eat. I don’t typically eat out of the casserole dish – as I’m sure you don’t either. 😉

    You could definitely give it a try, Evelyn. Because honey is sweeter I would try 1/2 cup to 1 cup of sugar.

    Not all grocery stores carry this, but it’s just a milk without one of the hormones. You can definitely use regular milk in this recipe, Lynell!

    I would say so, Leonor! As with all things sweetened with Splenda, it will taste slightly different, but it should work.
