A new fact I just learned about milk is that all other forms of mammal’s milk (i.e. goat, sheep, human) only contain the A2-type proteins, so it makes complete sense that our drinking milk should only contain the A2 protein. If you’re looking for a healthy treat to make with a2 Milk®, I have just the thing. I grew up on Rice Pudding being one of the ultimate comfort foods. Sometimes my mom would put raisins in it and, not that I have anything against raisins in certain dishes, I decided their place was NOT in rice pudding. It takes away from the creamy goodness. This rice pudding recipe has been in my family for ages. As a little girl, I recall my mom always telling me that her Scottish grandpa would refer to the dish as Rasputin. Makes me smile. The best time to make rice pudding (aside from when you need serious comfort food), is when you have a mountain of leftover rice.
Tip 1: If you get leftover rice in a Chinese Takeout container, remove it from the container and put it in a plastic container, so it doesn’t dry out.

Why is there nutmeg ? And no cinnamon in the instructions but vise versa in the ingredients? And I’m confused as to what you use to bake the rice in as it changes half way through to a lg baking dish or bowl from being a casserole dish ?

Hi Chris, I’m not sure where the confusion is because the cinnamon is listed in the instructions and in the ingredients. I didn’t list the nutmeg in the ingredient list as it’s just used for sprinkling over the top, but I went ahead and added it to the ingredient list as well, to avoid confusion. As for the baking dish, I have the same dish throughout, but put a single-serving in a small bowl, to eat. I don’t typically eat out of the casserole dish – as I’m sure you don’t either. 😉

You could definitely give it a try, Evelyn. Because honey is sweeter I would try 1/2 cup to 1 cup of sugar.

Not all grocery stores carry this, but it’s just a milk without one of the hormones. You can definitely use regular milk in this recipe, Lynell!

I would say so, Leonor! As with all things sweetened with Splenda, it will taste slightly different, but it should work.
