It’s the last week of school, and I am one tired momma! I’m sure I’m not the only one who is looking for the easiest lunches to slap together, dinners to serve, and shortcuts to get everyone where they need to be. It’s also heating up quite fast, so I’ve turned to my slow cooker for dinner inspiration. As we gear up for summer, I wanted to give you a lighter dinner that can be made with minimal ingredients, little time in the kitchen, and won’t heat up the house. I give you Slow Cooker Pork with Sundried Tomato EVOO.
As a young adult, I remember the trend toward extra virgin olive oil, and away from vegetable oils and trans fats. This is a trend I got on board with fast, because I could see the health benefits, and the flavor made it easy. Wish–Bone, the makers of the #1 Italian dressing, has seen this trend and have decided to jump on board. I can’t tell you how glad I am they have, because they’ve created something delicious for you and me!

I opted to toss the Sundried Tomato E.V.O.O. dressing in with a cut of pork shoulder, and it slices up nicely, but if you cook it long enough, you can shred it and serve it over baked potatoes. Yum! Talk about easiest dinner ever! Meat + dressing! I’d love to hear your one-bottle recipe ideas.
