We had some beautiful weather this week so we decided to have our first outdoor BBQ of the season! I love barbecue season because eating outside is just plain fun, the food is always so good, and the company is always great! When hosting a barbecue, whether it be for my immediate family or company, there’s one thing I absolutely don’t want to worry about – DISHES! Who wants to spend a nice sunny day indoors washing dishes? Not me. I like to keep a stash of fun paper plates on hand, and plastic utensils so we can have super easy cleanup after our meal is done.

Now that we’ve got the barbecue dishes under control, what you put on those plates is just as important. I love changing up the side dishes I offer with my different grilled meats, so for our first day of grill season, Keith whipped up his homemade Butter Bean Hummus and we served it with some real vegetable chips. They add great color and flavor. Then, I added a few fresh strawberries and served it alongside a very delicious grilled hamburger. YUM!
Butter Bean Hummus is very similar to hummus made with chickpeas, but is instead made with butter beans (or a variety of dried lima beans). You may think you don’t like lima beans because you’ve only ever had them in a frozen veggie mix (which nobody likes) but trust me, this hummus won’t taste anything like that!
I’d say our first barbecue of the year was delicious and a big hit. The outdoor temps couldn’t have been more perfect, cleanup was a breeze, and the food was scrumptious.
Butter Bean Hummus
Ingredients
- 1/4 cup Tahini
- 1/4 cup lemon juice
- 2 cups cooked lima beans
- 2 Tbs olive oil
- 2 tsp salt
- 1/2 Tbs pepper
- 2 cloves garlic min
Instructions
- In a blender, combine Tahini and lemon juice. Mix for one minute and then add all remaining ingredients. Blend for one more minute.
- Serve with your favorite veggies, crackers or chips.

Oh wow! I’ve never heard of butterbean hummus before! I have to make it. Butterbeans are in steady supply down here in Georgia.

We’re going to be having so many little family barbecues over the summer so the picnic section at Dollar General is going to help a lot. I haven’t tried butter bean hummus before but it sounds good!

Yum!! I just recently started to like Hummus but haven’t tried to make my own yet! We love to entertain so I’ll have to grab some Dixie Plates and make this delicious recipe.
