If I’m not mistaken, we are having record breaking temps this summer. With a high of 108° today and 111° tomorrow, I am grasping at ways to make dinner, that won’t heat up the house. I have turned to foil packets because they are so easy and all you have to do is pop them on the grill, head inside to get cool, and then go flip once. Voila – easy dinner! Thanks to my sponsors at Clorox, I have an easy clean up tip for you too. Allow me to show you how to make Healthy Chicken and Veggie foil packets with easy clean up.
With a piece of foil and a few ingredients, you can have yourself a tasty and healthy dinner in no time. But what about the clean up in the kitchen? Clorox has a new product that I love for a variety of reasons. The Clorox® Pump ‘N Clean for Kitchen makes cleaning as you cook a breeze. I personally can’t stand cooking in a messy kitchen, so I’m always cleaning as I go.
With the Clorox® Pump ‘N Clean, just grab some paper towels, put them on top of the pump and give it a press. Then wipe down the counter, cutting boards and/or knives, as you work. Rather than dirty multiple knives and cutting boards during my cooking process, I prefer to use one and just clean in between uses. The cleaning solution in the Pump ‘N Clean is food safe, so no need to worry about harsh chemicals getting into your food. The only caution is to not use to clean up after raw meat or fish.
For the Healthy Chicken and Veggie Foil Packets, you just need a cutting board to chop up your veggies and chicken (you will want to clean the board in between food items). You really can tailor the vegetables to your needs, but due to my low carb diet, I chose veggies that aren’t high in starch: cabbage, bell peppers, celery, garlic and onion. I opted to leave the onion out until after cooking, for a little crunch (and onions release more carbs during the cooking process). Season to your liking, but I prefer to use a low calorie Italian dressing and salt and pepper. Yum!
Chop up the chicken on your now-clean cutting board, and then get ready to fill your foil packets.
Just cook packets on the grill, at medium-high heat, for 7-8 minutes per side. Dinner in a breeze, and so healthy and refreshing for any lifestyle.
- 1 lb chicken, cubed
- 1/4 head of cabbage
- 1/2 red bell pepper
- 2 heads minced garlic
- 1/2 red onion
- 4 Tbs Italian dressing
- salt & pepper to taste
- Chop all vegetables and chicken into bite size pieces, and place in the center of a large piece of foil.
- Top vegetables and chicken with 1 Tbs Italian dressing and salt and pepper to taste.
- Make foil packet by bringing up two sides and folding over twice. Then fold in both open ends twice to seal. Repeat with remaining packets.
- Grill on medium-high heat with lid closed for 7-8 minutes per side.
- Remove foil packets with tongs and serve.
