Bacon and Feta Cheese Salad
As I get older I notice my taste buds changing. For example, when I was a kid I hated salad! I have grown to enjoy salad more and more, the older I get. I can actually say that salad is one of my favorite dishes to order at certain restaurants. While I feel that many restaurants can whip up a delicious and appetizing salad, I don’t always feel the same about the salads I make at home. For some reason, salad is one of those dishes that I think taste better when other people make it. I mean c’mon, the Apple Harvest Chicken Salad at Red Robin is so stinkin’ yummy!
With the help of Pinterest and my growing curiosity for creativity in the kitchen, my salads are getting tastier! There is a particular salad that my mom and I have been taking turns making this past month, that is my new favorite homemade salad. There are some summer salads that I still enjoy quite a bit. I can’t think of a creative or witty name for this salad so I will just call it Bacon and Feta Cheese Salad. Those are the two ingredients that stand out the most, in my mouth anyway!
- 5 cups spinach
- 1/4 cup feta cheese
- 1/4 cup sliced mushrooms
- 1/8 cup cooked bacon crumbles
- 1/8 cup craisins
- 1/4-1/2 red onion, sliced
- 2 Tbs pine nuts
- Poppyseed or Sweet Onion Dressing
- Toss all ingredients, except the dressing, in a large bowl. Serve with a poppyseed or sweet onion dressing. Any dressing will work, but poppyseed complements the salad well.
