When I was first married, we had some friends over for dinner and I’d made my first dish of scalloped potatoes. Much to my dismay, the potatoes were undercooked and there was nothing to be done but endure the degradation of a poor meal. I’ve feared serving scalloped potatoes to guests ever since! I changed things up and used the Sunset Fingerling variety pack featuring Ruby Reds, Purple Passion and Honey Golds. The bouquet of flavors in this variety ranged from creamy and buttery to nutty.
Here’s what graced our table recently:
- 28 oz bag Tasteful Selections Fingerling Potatoes
- 1/2 cup water
- 1/4 cup olive oil
- 3 tsp minced garlic
- 1/2 Tbs oregano
- 1/2 cup Feta cheese crumbles
- Preheat oven to 425° and line a 9x13 pan with foil.
- Keep small potatoes whole and cut larger potatoes in half, and place on foil-lined pan.
- Pour water, olive oil, garlic and oregano over potatoes and toss with hands.
- Bake for 25 minutes. Remove pan from oven and turn potatoes. Return to oven and bake another 25-30 minutes. Check closely for doneness.
- Remove pan from oven and sprinkle Feta Cheese crumbles on top and serve.
