Corn Dog Muffins
My Mondays and Thursdays are pretty hairy, which calls for easy meals. This past Thursday was ballet and karate, for the first time, and it made figuring out dinner, pretty tricky. While my mom and I took Little Girl to ballet, and then brother to karate, my dad stayed home with the twins. We were sitting at karate, trying to think of what we could have grandpa make for dinner, that would be easy. Grandpa is good at making breakfast, and that’s pretty much of his extent in the cooking department. My mom recalled a recipe that we both pinned a while back, for Corn Dog Muffins. We thought, that’s got to be easy enough for grandpa to figure out. The recipe comes from Happy Good Time Blog, and I thank her.
Dinner was a success, and grandpa got a pat on the back. These Corn Dog Muffins are great for the kids, and I say the adults too. Warm up a can of baked beans, and maybe whip up some of the tasty Apple Slaw that I love, and you’ve got yourself a delicious, and easy meal!
I have to mention that I had a bit of a difficult time trying to figure out how to take the best picture of the Corn Dog Muffins. I first put two muffins on the plate, and they just looked inappropriate! 😉 I figured I better add a third muffin, which I think helped. I also realized that the more I look at the word muffin, the more I realize the word looks kind of funny. I must be in a funky mood today.
Corn Dog Muffins
Ingredients:
- Hot dogs, cut into thirds
- Cornbread mix
Instructions:
1. Preheat oven to 400°, and spray muffin tin liberally with cooking spray.
2. Mix up a batch of cornbread muffins, per whichever package or recipe you like to use. We used Marie Callender’s Cornbread Mix.
3. Using a tablespoon, fill each muffin cup 3/4 full, with cornbread batter.
4. Insert one piece of hot dog into each muffin.
5. Bake muffins on center rack for 15 minutes, or until a toothpick inserted in muffin comes out clean.
6. Remove muffins from pan, while still warm, and serve. We ate ours dipped in ketchup!

I need help with this! I’ve made this recipe twice and both times the muffins completely fell apart when taking them out of the muffin pan, making it a big cornbread slop pile with hot dogs interspersed. Any suggestions? Of course, the kids still ate them up, but it wasn’t as clean/cute.
