Cocoa Meltaways

Because my family has had two different St. Patrick’s Day dinners in the past week or so, I thought I’d try a different dessert for our second meal. The first was our traditional Grasshopper Pie, which is to die for!!! Everyone needs to try it at least once! For this meal I decided to make my mom’s Cocoa Meltaways recipe, with green frosting. This is a chocolatey cookie that literally melts in your mouth. Be careful not to overbake.
Cocoa Meltaways
1/2 cup powdered sugar
1 cup softened butter
1 cup flour
1/2 cup cornstarch
1/4 cup cocoa
1/2 cup finely chopped pecans
1/2 tsp vanilla
Frosting:
1/4 cup softened butter
1 cup powdered sugar
2-3 Tbs milk
1/2 tsp vanilla
Red or Green Food coloring depending on the holiday you want to serve these for. You could probably add a little mint extract if you want to.
Heat oven to 325°. Cream powdered sugar and butter until light and fluffy.
Slowly add flour, cornstarch and cocoa to creamed mixture.
Mix at low speed until all ingredients are moistened.
Stir in pecans and vanilla.
Refrigerate dough for about 30 minutes to make handling easier.
Shape dough into 1″ balls. Place on an ungreased cookie sheet and bake for 8-12 minutes.
Cool 1 minute before carefully removing cookies from cookie sheet. Cool completely, then frost with a dollop of frosting.
Allow frosting to set before storing.
Caution: These WILL melt in your mouth!
