Broiled Parmesan Tomatoes


I mentioned last night on facebook that I was STARVING and wanted Red Robin so badly! I discovered the problem. I started a low calorie menu plan (no diet food – just smaller portions and healthier food), and because of an oncoming migraine last night, I didn’t eat everything I was supposed to, with my dinner. My mistake! The food that I am getting to eat is truly tasty and it doesn’t feel like a diet at all! I even get a fat free pudding cup or fudgsicle after dinner sometimes. I don’t do well if I have to deprive myself – as my facebook followers can see. lol I decided on a low calorie menu plan because I have had a very difficult time losing weight and thought I would be more likely to stick to something if I had a menu plan. So, a menu plan is what I created. Sunday night was the first day on this menu plan, and my first though was – if this is what you call dieting, then sign me up! I had a moderate piece of barbecue chicken, but for a side dish, I had a cup of couscous topped with Broiled Parmesan Tomatoes. The tomatoes were the perfect thing to give the couscous flavor, and a really healthy alternative to sauces. These serve well as an appetizer or side dish.

Slice two ripe tomatoes, per your desired thickness. Place on a cookie sheet and sprinkle with fresh parmesan cheese (about 2 Tablespoons per 2 tomatoes, to stay moderate). Place under the broiler until golden – about 7 minutes.
