Crock Pot Ranch Pork Chops and Rice


Sundays are one of those days where the Crock Pot becomes my best friend. I don’t get out of church until 4pm, and by the time we get home and get changed, everyone is HUNGRY! I don’t like to start up dinner at that time, because then I have to listen to whining! As often as I can, I will get dinner prepared before church, so it’s ready to go. A slow cooker is the best way to do this. I came across a Creamy Ranch Pork Chops & Rice recipe from Campbell’s Kitchen. I switched things up to make it work for the Crock Pot. Then I did my own spin on the rice. I have to say that this was honestly one of the best Crock Pot meals I have ever had. It really warmed my belly, and felt like good ol’ comfort food – perfect for the Sabbath, or any busy day!

Crock Pot Ranch Pork Chops & Rice

Serves: 6
Ingredients
  • 1 Tbs canola oil
  • 6 boneless pork chops – any size will work, but mine were thin
  • 1 can (10 3/4 oz) Campbell’sĀ® Condensed Cream of Mushroom Soup (can use lower fat)
  • 3/4 cup milk
  • 1 envelope (1 oz) ranch salad dressing packet
  • Paprika
  • Rice:</strong
  • 2 Boxes Near East Rice Pilaf, Original
  • 3 1/2 cups water
Instructions
    1. Heat oil in large skillet, over medium-high heat. Add the pork and cook until browned on both sides.
    2. In a bowl, combine the soup, milk and 1/2 package salad dressing, and stir.
    3. Place browned pork chops in slow cooker and cover with the soup mixture. (Do not wash the skillet)
    4. Cook on low for 3 hours. You can let the meal sit in the slow cooker, on warm, for longer if you need it to.
    5. Before serving, sprinkle with the paprika (optional)

Serve with the Ranch-Style Rice.

  1. Prepare rice while Pork Chops cook. (This can be done in advance and heated through before serving), pour contents of the Near East Rice Pilaf into the used skillet. You will not be using the seasoning packet that comes with the Rice Pilaf. No need to add extra oil when you have the tasty pork chop drippings to cook the rice in.
  2. Add water and remaining contents of the ranch packet. Stir and bring to a boil.
  3. After rice comes to a bowl, cover with a lid and cook on low for 20-25 minutes.
  4. Serve Pork Chops on top of rice, and top with extra sauce if desired.

    With a baby on the way, I’ve been stocking up on good crockpot recipes. This is doubly awesome because I think my husband, who can be rather finicky about pork, would love these! I’d probably have to substitute another soup base for cream of mushroom though since he’s not a mushroom fan. (Wow, doesn’t he sound like a picky eater?)
